A restaurant is more than menus and produce – it’s the people who bring the flavours to life. Meet the team whose hands, hearts, and craft shape your visit.
Lux Dag för Dag is a family‑run restaurant led by Henrik and Lotta Norström, who helped open the restaurant more than 20 years ago (2003). Within a year, Lux (then Lux Stockholm) was awarded a Michelin star – a star they kept until 2013, when the owners chose to change the name and direction to today’s food concept and a more accessible price point.
Henrik
Henrik has worked as a chef since 1989 and written two cookbooks Mitt nära kök (2009) and Åtta råvaror (2015) - both in Swedish. In 2001 he won silver in the prestigious Bocuse d’Or and later served for many years as Sweden’s judge in France, as well as president of the Swedish team.
All cooking begins with the raw ingredient. If the food is going to taste truly good, the produce must be of high quality. It’s as simple as that. Throughout my years as a chef, I’ve been driven by the search for excellent produce from dedicated growers and farmers who are passionate about what they do. The quality of the ingredient is absolutely crucial for the final result and the flavour experience. That’s why we base today’s menu on the produce that is at its best right now. We also preserve ingredients during harvest season so we can enjoy them throughout the rest of the year.


Lotta
After completing a Bachelor’s degree in Restaurant and Culinary Arts at Grythyttans Restauranghögskola, Lotta gained experience as a restaurant manager at several Stockholm restaurants before opening Lux.
Creating a space where every guest feels seen and genuinely welcomed is second nature to me, and shaping an experience that becomes perfect for that guest, on that evening, is both our goal and joy. The team around us is everything, and there’s a special kind of happiness when everything aligns on our side and the guest leaves content and uplifted.

Lotta Norström
Dining room, press, restaurateur
Lotta has been the heart of the dining room since the opening in 2003 and has lived through every exciting phase of Lux. What she still loves most is a service in full flow — when everything just clicks.

Albina Almgren
Restaurant manager
Albina loves to travel. She spent several years working in Norway before joining Lux. She brings warmth to our dining room and guides you to the perfect food and wine pairings.

Tomas Ljung
Sous chef
Tomas happily rides his motorcycle to work and spends his free time climbing. He’s newly married, and every now and then his wife comes in to cook for the team at Lux. A real treat!

Sofie Niss
Head waitress
Sofie is not only our maître d’ — she’s also an artist who paints extensively. We always want her to write our boards thanks to her beautiful handwriting. In the dining room, she guides guests with calm confidence and makes sure everything looks just right, everywhere.

Filip Larsson
Chef
Filip was named Young Chef of the Year 2025! He’s from Norrbotten, and you can both hear it and feel the warmth it brings. Beyond cooking, he has spent his (young) life devoted to training in all its forms.

William Brittsjö
Sous chef
William is passionate about cooking and is constantly creating new dishes in his mind. He was a finalist in Chef of the Year in both 2022 and 2023, and he’s eager to keep competing in the culinary world. We’re cheering him on!

Hanna Lindberg
Chef
Hannah was named Culinary Student of the Year 2023 and competed several times in cooking during her upper‑secondary school years. We’re delighted to have a young woman in the kitchen. And on top of that, Hannah holds a black belt in Taekwondo — impressive!

Emelie Mannerhof
Waitress
Emelie joins us at Lux Dag for Dag from time to time. She is studying to become a preschool teacher but enhances our service when she can.
